Orange Chicken

Here's an easy weeknight recipe to add to your Spring rotation. Serve this over rice with a side of green beans or seasonal roasted asparagus. It's one of our favorites. Enjoy!

Ingredients:
2 boneless, skinless chicken breasts, cut into bite-sized pieces
½ cup flour
½ teaspoon salt
½ teaspoon pepper
3 tablespoons butter
3 tablespoons brown sugar
3 tablespoons vinegar
1½ cups orange juice
1 teaspoon nutmeg
1 teaspoon dried basil
½ teaspoon ground ginger
1 can mandarin oranges, optional

Instructions:

  1. Combine flour, salt and pepper in bag. Shake chicken pieces in flour until coated. Brown in butter in a large skillet over medium heat.
  2. Combine sauce ingredients and add to skillet. Simmer 15-20 minutes or until tender and cooked through. The sauce will thicken slightly. If desired, add drained mandarin oranges and cook 5 more minutes.

 Ham & Cheese Dip (Frito Dip)

If you're like me, you need a new dip to be addicted to like you need a hole in the head. But I'm going to share this with you anyway. You can thank me as you're running that extra 10 minutes on the treadmill, or getting that rubber band out to jerry-rig your jeans shut.

This dip is our family's favorite and is always served when we're at my Grandma Marilyn's house. One of my many favorite memories attached to her.

If you're taking this to a Superbowl party - definitely double this. If you're making a batch to eat while watching Wings reruns on Netflix, do not double this.

Ham & Cheese Dip (we call it Frito Dip)

1 4.25 oz can Deviled Ham
1 5 oz jar  Kraft Pimento Spread
1/2 cup mayonnaise
2 T minced dried onion
1 tsp dried parsley, or fresh
few drops hot sauce
Chives for garnish (optional)

Mix all ingredients. Garnish with chopped chives (optional). Chill for an hour before serving. Serve with corn chips, tortilla chips, pretzels, or raw veggies. Fritos are the way to go in my opinion!
